Asparagus & Bacon Grilled Cheese

Cook Time: 8-10 minutes
Ingredients:
1 tbsp (15 mL) butter, optional
4 slices bread
2 tsp (10 mL) Dijon mustard
4 slices cheddar cheese
4 spears blanched asparagus, sliced in half lengthwise
2 tbsp (25 mL) crumbled bacon
Cooking Instructions:
Butter one side of each slice of bread (optional). Spread 1 tsp (5 mL) Dijon mustard on unbuttered-side of one of the slices of bread, add one cheese slice, 4 asparagus slices, 1 tbsp (15 mL) crumbled bacon, one cheese slice then top with bread buttered-side up. Repeat for second sandwich. In medium frying pan with lid, over med-high heat, place sandwiches butter-side down, cover; cook for 5 minutes or until golden brown: Flip sandwiches; cover; cook 4-5 minutes, or until golden brown and cheese is melted. Serve immediately.

By Request! We love asparagus and this is just one more way to incorporate more veggies into your meals. Trim or peel the woody ends then BLANCHE a bunch of asparagus by adding to boiling water for 45 seconds to 3 minutes depending on the the thickness of the stalk-they should be fork-tender. Plunge into cold water to stop the cooking. Pat dry and refrigerate.
