Southwest Black bean Salad w/ Honey Lime Vinaigrette
This bright and refreshing dressing is sure to please. Scale portions up or down by using equal amounts honey, lime juice and olive oil. Use 1/3 cup or to taste in this summer salad and save the rest for later!
Serves: A group & 1 cup dressing

Prep Time: 25 minutes
Ingredients:
Dressing:
1/3 cup lime juice
1/3 cup honey
1/3 cup olive oil
Salad:
1 19 oz can black beans drained and rinsed
3 large tomatoes, chopped
2 mini cucumbers, chopped
2 avocado, pitted, peeled and cubed
1 cup cubed feta cheese
1/4 cup sliced red onion
1/3 cup Honey Lime Vinaigrette (recipe above)
Salt & Pepper, to taste
Cooking Instructions:
Dressing:
In sealable jar, combine all ingredients and shake well. Use as a salad dressing or dress it up to make a marinade by adding 3 cloves crushed garlic and 1 tsp salt (Or to taste)
Salad:
In serving dish combine, beans, tomatoes, cucumber, avocado, feta, onion and dressing. Season with salt and pepper to taste!
