Mediterranean Muffaletta
Traditional Muffaletta is a traditional Italian round loaf or submarine style sandwich loaded with layers of delicious sliced meats and cheeses, lettuce tomatoes and olive tapenade or pesto. This version layers veggies both raw and roasted with sprinkles of feta cheeses to give a very satifying and magnficent Muffaletta!
Be generous with all of the ingredients...this is just a guideline...use your imagination!
I think a little crumbled bacon or cooked proscuitto would be fantastic too:)

Advance Time: up to12 hours
Ingredients:
1 large loaf Italian Bread
Mayonnaise
Sweet or red onion, thinly sliced
Lettuce
Sliced tomatoes
Cucumbers very thinly sliced, lengthwise
Avocado, mashed
salt and pepper, to taste
Purple cabbage, thinly sliced
Roasted vegetables (peppers, zuccinini, onions, eggplant
Olive tapenade
Microgreens or lettuce
Cooking Instructions:
Slice loaf of bread lengthwise; spread liberally with mayonnaise on both open cut sides.
On bottom side, evenly layer rings of onion, letttuce, sliced tomatoes and cucumbers. Carefully top with mashed avocado then season lightly with salt and pepper. Continue with cabbage, roasted vegetables. olive tapenade then micro greens or lettuce. Firmly close the layered sandwich and wrap fairly tight with plastic wrap or parchment paper to allow all the layers to settle in.
Refrigerate until ready to eat. Unwrap and serve Muffaletta family-style on large wooden cutting board with serrated edge knife and extra condiments if desired.
