Terrific Tzatziki
Serve with pita bread, carrots, cucumbers, tomatoes or grilled chicken.
Serves: 1 cup/250 mL
Prep Time: 5 minutes
Stand Time: 2-4 hours
Refrigerate Time: 5 hours
Advance Time: 48 hours
Ingredients:
1 cup (250 mL) plain Greek yogurt
1/2 cup (125 mL) shredded seedless cucumber, squeezed dry
1 garlic clove, minced
1 tbsp (15 mL) lemon juice
Salt and pepper, to taste
1 tbsp (15 mL) olive oil
Cooking Instructions:
In small bowl, combine yogurt, cucumber, garlic, lemon juice, salt & pepper and dill. Let stand 1 hour to blend flavours. Drizzle with olive oil before serving.
Personal Story:
Have yogurt on hand for last minute dips. Try shredding two radish into mixture for a little extra zing and colour. Also fabulous combined with pure maple syrup. Creamy yet light!
