Corn Gremolata
Have an extra peice of cooked corn? Dress up the standard gremolata of parsley, lemon, garlic and olive oil with corn niblets...colour and flavour!
Top pasta, steak, fish or chicken.
Serves: Makes appoximately 1 cup (250 mL)
Ready In: 5 minutes
Ingredients:
3/4 cup (175 mL) cooked corn niblets
1/3 cup (80 mL) finely minced fresh parsley
3 tbsp (45 mL) olive oil
2 tbsp (30 mL) lemon zest
1 large clove garlic, minced
salt and pepper, to taste
Cooking Instructions:
In medium bowl, combine all ingedients. Refrigerate up to 3 days.
