Chicken Fried Rice

1 egg 1 tbsp (15 mL) water 1 tbsp (15 mL) butter 1 tbsp (15 mL) vegetable oil 1 onion, chopped 2 cups (500mL) cooked white rice, cold 2 tbsp (30 mL) soy sauce 1 cup (250 mL) shredded carrots 1 cup (250 L) cooked, chopped chicken meat 1/4 cup (50 mL) chopped green onions 1/4 cup (50 mL) green peas (fresh or frozen)

Cooking Instructions:
In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg; let stand for 1 to 2 minutes or until cooked and firm. Remove from skillet and cut into strips. In same skillet, heat oil; add onion and sauté until soft about 2 minutes. Add rice, soy sauce, shredded carrots, chicken, green onions & peas. Stir fry together for about 5 minutes, then stir in egg. Serve hot.
