Gluten-Free Red Prince Apple Oatcake Crackers


Traditional Scottish Oatcakes are quite dry and meant for dipping. We’ve added the sweetness of Red Prince apples to create a little more moisture yet maintain the authentic texture and flavour to complement the creamy elegance of the Majestic Red Prince Apple soup. However, these oatcake crackers can certainly be enjoyed with a simple cup of tea if you wish.

Ingredients:

1 ½  cups Gluten-Free All Purpose Baking Flour [Bob’s Red Mill] 350 mL
1 cup  Scottish Steel Cut Oats 250 mL
1 cup Large Flake Rolled Oats 250 mL
2 tbsp Brown Sugar 30 mL
½ tsp Baking Soda 2.5 mL
¾ cup Sweet unsalted softened butter 225 mL
1 Large Red Prince Apple 250 mL



Cooking Instructions:

Position a rack mid oven and preheat to 400 degrees F. Line a baking sheet with parchment. In a large bowl mix together the flour, steel cut oats, rolled oats, brown sugar, baking soda and salt. Add diced apple to the dry ingredients and stir together to coat apple pieces.
Wash hands. Add softened butter to dry ingredients and mix with your hands squeezing the dough until it all sticks together forming a ball. Cut the ball in half and roll out on parchment paper in an 8”X10” rectangle or till approximately ¼ inch thick. With a long knife press the blade through the dough to cut the dough cross ways every inch to form cracker sticks without cutting through the parchment. Lift the cracker sticks using the parchment paper and place on a cookie sheet.
Bake the oatcake crackers until golden brown [about 15 minutes].
Let cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Repeat with other portion of dough.
Makes approximately 24 portions.
