Stuffed peppers

Ingredients:

3 cups of cooked quinoa
1 tsp coconut oil
1 cup corn kernels
1/2 cup black beans
1/2 diced tomatoes
1 cup tomato sauce
1 cup shredded cheese
1/2 cup kale or spinach chopped
1/2 cup salsa ( spiced to your liking)
3 tbsp fresh cilantro

Note: 1 cup dried quinoa + 2 cups ( beef or chicken broth) cooked for 20 min = 3 cups of quinoa



Cooking Instructions:

Combine in a bowl
Mixture: Quinoa, kernels, beans, tomatoes, spinach or kale, cilantro, tomato sauce and salsa
Slice peppers in halves and clean out for bowls.
Stuff with mixture and top with shredded cheese.
Bake at 350 for 25 min.
Serve right away
