Quinoa and Black Bean Salad with Ginger Lime Dressing

Ingredients:
1 cup (250 mL) quinoa
2 cups (500 mL) water
1 cup (250 mL)canned black beans, drained and rinsed
2 tbsp (25 mL) vegetable oil
1 tbsp (15 mL) maple syrup
1/4 cup (50 mL) freshly squeezed lime juice
1 tbsp (15 mL) finely minced ginger
1 tsp (5 mL) minced garlic
salt and pepper, to taste
1 red pepper, diced
1 large carrot, peeled and diced
2 green onions, finely chopped

Cooking Instructions:
In medium saucepan, bring water to a boil over high heat; stir in quinoa. Reduce heat to low; cover and simmer 12 min or until quinoa is tender. Drain any excess liquid; add to large mixing bowl with black beans and bring to room temperature or refrigerate until ready to assemble.

In small bowl, whisk together canola oil, maple syrup, lime juice, ginger, garlic, salt and pepper; pour over quinoa; add red pepper, carrot and green onion; toss and let stand 10 minutes; adjust seasoning and serve.

Personal Story:
Quinoa can have a bitter flavour so it is necessary to rinse well before cooking.
Add or substitiute blanched asparagus or any of your favourite or "allowed" seasonal vegetables.
Cut your veggies into uniform sizes that aren't too large because quinoa is a smaller more delicate grain.
