Easiest Chocolate Cake

The chocolate flavour is enhanced by adding coffee to this super moist yummy cake. If you have left over coffee from the morning replace 1/2 cup milk with 1/2 cup coffee.

2-1/4 cups (550 mL) all-purpose flour

2 cups (500 mL) granulated sugar

3/4 cup (175 mL) unsweetened cocoa powder, sifted

2 tbsp (25 mL) instant coffee granules

1-1/2 tsp (7 mL) each: baking powder and baking soda

1/2 tsp salt

2-1/4 cups (550 mL) milk

2 egg, lightly beaten

1/4 cup (50 mL) vegetable oil

2 tsp (10 mL) vanilla

1/2 cup (125 mL) chocolate chips (optional)

Cooking Instructions:

Preheat oven to 350F (180C). Prepare a 9x13-inch (3L) baking dish. In large bowl, combine flour, sugar, cocoa, instant coffee granules, baking powder, baking soda and salt. Beat in milk, eggs, oil and vanilla; beat well. Pour into pan and bake for 40-45 minutes or until top is slightly firm to the touch. Let cool in pan on baking rack for 20 minutes; remove from pan and cool entirely if icing.
