Fruitsational Blueberry Pancakes with Creamy Country Berry Apple Topping

Ingredients:


Pancakes:



1 cup (250 mL) each: quick oats, whole wheat flour and all-purpose flour



1 tbsp (15 mL) baking powder



3/4 cup (175 mL) fresh or frozen blueberries



1 egg, lightly beaten 2 cups (500 mL)



1% milk 1/4 cup (50 mL) vegetable oil



1 cup (250 mL) Fruitsations Country Berry Apple Sauce (2-111g packages)



Topping:



1 111g package Country Berry Apple Sauce



2 cup (125 mL) French Vanilla or Plain yogurt




Cooking Instructions:


Pancakes: In medium bowl, whisk together egg, milk, oil and Fruisations Country Berry Apple Sauce. In large bowl, oatmeal, flours, baking powder; stir in blueberries then the wet ingredients. Combine until well incorporated. Preheat large nonstick skillet over medim high heat or 350F , place 1/4 cup batter in hot skillet about 2 inches apart. Cook for 3 minutes each side. Serve immediately or allow to cook then line between plastic wrap or waxed paper and freeze. Reheat in toaster for best results. Serve with Creamy Country Berry Apple Topping. Topping: In small bowl, combine Fruitsations Country Berry Apple Sauce and yogurt until well mixed.
