We recently received The Vegetarian's Complete Cookbook in the mail and did a little dance when we opened the package. The ladies over here at KK love quinoa, not only for it's crazy good health benefits, like gluten free and complete protein, but also for it's nutty flavour, versatility, and pretty colours.


The cookbook starts off giving you a little background on quinoa, answering the long time question "is it a grain or a seed?", followed by all the different types of quinoa that are out there, how to actually pronouce it correctly (it's KEEN-wah), and the secret to cooking the perfect batch. 


The recipes in this cookbook are endless. Who knew that you could do so much with this little seed? (or is it a grain...?). It has everything from breakfast crepes, to baked goods like bread and cookies, soups, stews, casseroles, and decadent desserts like chocolate macaroon pudding.

What stood out to me when I first flipped through the pages was the Goat Cheese, Red Pepper, and Arugula Quiche. The recipe substitues quinoa instead of pastry crust. Can you believe it! Now you can enjoy rich, fluffy quiche with a healthy crust alternative. 


The recipe was very simple to follow, quick to make, and very little clean up. The goat feta added just the right ammount of saltiness, the arugula was the perfect green touch, and the crust was beyond good. It crisped up around the edges and I did not miss the real thing for one second when I was eating it. I actually enjoyed it even more because I knew that I was doing my body good with each bite :)
