Lentil & Smoked Turkey Soup


Red lentils cook so quickly, are inexpensive and delicious! This versatile soup or stew can be loaded with any of your favourite vegetables. The bone with some meat from the smoked turkey thigh infuses flavour and saltiness. If wanting a vegetarian version, omit the bone and adjust the seasonings.

Cook Time: 20 minutes

Ingredients:

1 onion, chopped

2 carrot, peeled, chopped

3 cloves garlic, minced

1 zucchini, chopped

1 pepper, chopped

1 cup dried red lentils, rinsed

1 26oz can diced tomatoes with juices

1 cup corn, optional

2 bay leaves

1 tbsp dried thyme

8 cups broth

smoked turkey thigh, meat removed and chopped (set aside)



Cooking Instructions:

In large toss all of the ingredients together except for the reserved chopped smoked turkey meat; bring to a boil and simmer 20 minutes or until all the vegetables are tender and soup has thickened. Remove bay leaves and add chopped turkey. soiup can simmer a little longer are be served immediately.
