Easy Red Prince Apple Tart

This easy to make apple tart is an excellent way to experience the baking attributes of the Red Prince apple.  Not only does this wonderful winter apple bake well, the baking process caramelizes the apples to create a decadent treat, low in sugar content and big on flavour. Great served as a dessert with frozen yogurt or by itself with afternoon tea.

8 oz. Frozen puff pastry [thawed according to package directions 250 g
2   Large Red Prince Apples, skin on, halved, cored and thinly sliced, approx. 2 cups 500 mL
1 tbsp Fresh lemon juice 15 mL
1 tbsp Ground cinnamon 15 mL
2 tbsp Maple Sugar [if not available use brown sugar] 30 mL
2 tbsp Sweet unsalted butter, cut into small chunks 30 mL

Cooking Instructions:

Preheat oven to 400 degrees F.
Roll out entire package of pastry [maintaining rectangular shape] on a floured surface.
Place pastry in a rectangular tart pan, pressing edges in place and trimming excess pastry from the top
Place pan with pastry in fridge to chill.
Wash, core and slice apples into thin half moon shaped pieces and place in a large mixing bowl.
In another bowl combine, cinnamon lemon juiced and brown sugar. Stir until sugar is dissolved. Pour over apple slices and toss to coat. Let stand for 10 minutes.

Remove pastry from the fridge and fill the tart pan with apples slices over lapping slightly to create a fan pattern. Dot the apples with cubes of cold butter evenly across the top of apples.

Bake in oven for 30 minutes or until pastry is puffed and golden brown.

Makes 8-10 servings

Serve with Rum and Raisin Ice Cream or for the calorie conscious vanilla frozen yogurt.
