Creamy CRAVE Broccoli Soup

Want a comforting, hearty meal without the calories? Try this creamy broccoli soup. Instead of heavy cream, we used cashews to make this soup velvety smooth and satisfying and CRAVE enerjive quinoa skinnys substitute for the spoon! This recipe will be sure to hit the spot!

Serves: 8
Ready In: 30 minutes


2 Tbsp (30ml) olive oil
2 cloves garlic
1 large onion
4 stalks celery
1 head broccoli
4 cups (1L) vegetable broth
2 cups (500ml) water
3/4 cup raw cashews
cayenne pepper to taste
1 box CRAVE skinnys

Cooking Instructions:

1. Heat olive oil in a large pot over medium heat. Roughly chop garlic, onion, and celery. Add to pot and saute for 5 minutes or until onions are translucent.
2. Roughly chop broccoli and add to pot. Add vegetable stock and water. Bring to a boil then cover and let simmer for 20 minutes, stirring occasionally.
3. Transfer mixture into high speed blender or food processor. Add cashews, and blend until smooth. (may have to do this in 2 batches)
4. Serve into bowls. Sprinkle with cayenne and use CRAVE skinnys for dunking and dipping.

Personal Story:

Tip: soak your cashews before adding to the soup. This activates their healing ezymes and is easier on your blender!
