Creamy Caramelized Onion, Blue Cheese and Spinach Dip



Dip can be prepared and refrigerated up to one day (24 hours) in advance; the flavours are enhanced as the dip rests. Dip is delicious used as a spread or condiment for wraps, sandwiches, or barbecue hamburgers. Variation: Stir in 1/4 cup (50 mL) crumbled bacon bits before serving.

Ingredients:


1 tbsp (15 mL) butter



1-1/4 cup (300 mL) thinly sliced onions 



4 cups (1 L) coarsely chopped spinach



3/4 cup (175 mL) crumbled Blue Cheese



3/4 cup (175 mL) low fat sour cream (5 % M.F.) or plain yogurt



1/2 cup (125 mL) mayonnaise



1/4 tsp (1 mL) each, salt and pepper



1 bag (220 g) kettle or hand made style chips




Cooking Instructions:


In large skillet melt butter over medium heat; add onions and cook stirring frequently for 5 min or until onions are tender. Cover; reduce heat to low and cook, stirring occasionally for 15 min or until golden brown.



Increase heat to medium; add spinach and stir 2 to 3 min or until wilted; remove from heat.



In medium bowl, combine cheese, sour cream and mayonnaise; mash with back of wooden spoon until cheese pieces are to desired consistency.



Stir in onion mixture, salt and pepper.



Cover and refrigerate to allow flavours to blend for 1 hr or up to 1 day.



Serve with kettle or hand made style chips.




Personal Story:


This is an amazing appetizer and very decadent. Serve with hand made style potato chips, Kettle Potato Chips or Lavash Flax Seed Crackers that are sturdy enough to scoop up the mixture without crumbling. Creamy dreamy Blue cheese makes it yummy any way you dunk !
