Medjool Date Honey Glazed Shrimp

Dates, honey, mango...a perfect sauce for shrimp with a Carribean flare. Served over a bed of basmati rice or fresh green salad.

3 Tbsp Medjool date paste
2 Tbsp Mango puree
1 Tbsp Honey
2 Tbsp Lemon juice
1 Tbsp Garlic powder
2 Tbsp Fresh ginger, grated
2 lbs 16/20 Shrimp, peeled & de-veined
2 Tbsp Vegetable oil
Salt & pepper to taste

Cooking Instructions:

Make a date paste by pureeing three pitted and chopped Medjool dates in a food processor with a little water.
In a large bowl, add date paste, mango puree, honey, lemon juice, garlic powder and ginger. Mix well to create a marinade.
Add shrimp to bowl and mix until each shrimp is coated with the marinade.
Place in the refrigerator and let the shrimp marinate for 1 hour.
Heat a saute pan over medium heat, add oil and cook marinated shrimp for 2 minutes on each side. Season with salt and pepper to taste.
Serve with your favorite rice or salad.
Serve immediately.
