Our version of this Bavarian beer-garden snack features a combination of Ontario cheese made into a smooth spread using a food processor. Serve with fresh Ontario vegetables, such as slivered red onion, crisp radishes and broccoli florets, or pretzel sticks.
Serves: 8 to 10 (Makes 1-1/2 cups (375 mL))

Refrigerate Time: 1 hour
Ingredients:
Half container (250 g) 15% M.F. light deli-style cream cheese at room temperature
4 oz (125 g) Ontario semi-soft or creamy cheese, such as Oka-style “washed-rind” or Brie-type, rinds removed (about 1 cup/250 mL) at room temperature
4 oz (125 g) Ontario Old White Cheddar, grated (about 1 cup/250 mL), at room temperature
2 Ontario Shallots or 1 small Ontario Onion, finely diced
1 tsp (5 mL) hot or sweet smoked paprika
1 tsp (5 mL) caraway seeds
Pepper
Cooking Instructions:
In food processor fitted with blade attachment, combine cream cheese, semi-soft cheese, cheddar cheese, shallots, paprika, caraway seeds, and pepper to taste; blend and pulse for 2 to 3 minutes or until completely smooth, scraping down bowl occasionally.
Refrigerate for at least 1 hour (and up to 2 days) for flavours to blend.
