Watermelon Havarti Stacks

This nouveau take on a sandwich substitutes watermelon for bread. The creaminess of havarti cheese mixed with fresh dill and savoury ranch dressing balances the sweetness of the watermelon, delivering a petite yet satisfying, fully-rounded option for bridal shower gatherings.

8 4-inch (10 cm) round (1-inch [2.5 cm] thick) slices of seedless watermelon

8 slices havarti cheese

3 grilled chicken breasts, cooled and julienned across the grain

1 tsp (5 mL) minced fresh dill, stems removed and discarded

1 cup (250 mL) natural low fat ranch dressing

Cooking Instructions:

Use a 4-inch (10 cm) circular cookie cutter to cut watermelon rounds. Using the same cookie cutter, trim havarti cheese into 4-inch (10 cm) rounds. Divide four pieces of watermelon amongst four plates and top each with a slice of cheese. Repeat by adding another piece of watermelon and remaining round of cheese. Top each watermelon stack with equal portions of julienned chicken. Combine fresh dill into the ranch dressing and garnish each stack with dressing.
