Asian wrap



Use any ingredients you like in the rice paper rolls. This combination using curly carrots and asparagus is fresh with the flavours of spring. Blanching your asparagus in boiling water for 2-3 minutes then plunging them into ice water brings out the crisp bright green colour and softens them for easy eating.

Ingredients:


Ginger Citrus Dipping Sauce: 2 tbsp. (25 mL) each: rice vinegar, soy sauce 1 tbsp. (15 mL) each: lime juice, orange juice 1/4 tsp. (1.25 mL) sesame oil 1 tbsp (15 mL) finely grated ginger Rolls: 1 cup (250 mL) curly carrots 1 tsp (5 mL) each: finely chopped basil, cilantro, mint 8 stalks (about 1/2 lb/ 250 g) asparagus, trimmed, blanched* 4 leaves Butter lettuce 4 large rice paper wrappers




Cooking Instructions:


To Assemble: In small bowl, combine rice vinegar, soy sauce, lime and orange juices, sesame oil and ginger; add 1 tbsp. (15 mL) of this mixture to curly carrots and toss well. In another small bowl, combine basil, cilantro and mint. Working with two wrappers at a time, soften rice paper wrappers for 20 to 30 seconds in a shallow bowl of very warm water. Arrange on damp tea towels in a single layer. Arrange 1/4 cup (50 mL) marinated curly carrots prepped with Benriner � Turning Slicer on middle third of wrapper. Sprinkle with 1/4 of herb mixture and top with 2 asparagus spears and lettuce leaf. Fold up bottom third, fold in one end and roll up snuggly. Repeat with remaining ingredients. Serve rolls with dipping sauce.

The Combinations of vegetables and meat are endless. Carrots and asparagus are a natural mix, we use curly carrots in place of the rice vermicelli noodles.. Play with the first couple to get your style (skinny, fat, loose, tight) like in yoga, no two people's form will be the same! Tricks: don?t over soak the wrappers, set them onto a clean cotton dish towel to absorb extra liquid, keep pointy foods running lengthwise so they don?t pop out the sides, work fairly quickly. Have fun it makes your food taste better.
