Easiest Chocolate Cake & Fudge Frosting



The chocolate flavour is enhanced by adding coffee to this super moist yummy cake. If you have left over coffee from the morning replace 1/2 cup milk with 1/2 cup coffee.

Ingredients:


Cake:



2-1/4 cups (550 mL) all-purpose flour



2 cups (500 mL) granulated sugar



3/4 cup (175 mL) unsweetened cocoa powder, sifted



2 tbsp (25 mL) instant coffee granules



1-1/2 tsp (7 mL) each: baking powder and baking soda



1/2 tsp salt



2-1/4 cups (550 mL) milk



2 egg, lightly beaten



1/4 cup (50 mL) vegetable oil



2 tsp (10 mL) vanilla



1/2 cup (125 mL) chocolate chips (optional)



Frosting:



8 Tbsp unsalted butter one stick

1 cup unsweetened cocoa powder

4 cups powdered sugar aka confectioners sugar or icing sugar

⅔ cup heavy cream or whole milk



 




Cooking Instructions:


Cake:



Preheat oven to 350F (180C).



Prepare a 9x13-inch (3L) baking dish.



In large bowl, combine flour, sugar, cocoa, instant coffee granules, baking powder, baking soda and salt.



Beat in milk, eggs, oil and vanilla; beat well.



Pour into pan and bake for 40-45 minutes or until top is slightly firm to the touch.



Let cool in pan on baking rack for 20 minutes; remove from pan and cool entirely if icing.



Frosting:



In a small saucepan or skillet, melt the butter over low heat.

Mix in cocoa powder, stirring until the mixture is nice and thick.

Place chocolate mixture in the bowl of a stand mixer (or a large mixing bowl if using a hand mixer). Add ½ of the powdered sugar, mix until combined. Add half of the heavy cream, mix until combined. Continue with remaining powdered sugar, vanilla, and milk.

Mix on medium speed for 5 minutes, until frosting is smooth and creamy. Enjoy!
