October 31 2012 - Taco Night: Catfish Style.

Mexican is my favourite style of food, so when I stumbled across this recipe my mouth instantly began to water. If you know me, you know that I like to keep things flexi, and this recipe is a great way to spice up your traditional taco night.

                       

Catfish is a great alternative to ground beef when making tacos. It's meaty texture is 100% satisfying, and this way you get to skip the heavy amounts of saturated fat and lengthly digestion time - eek. Catfish   has about 19 grams of protein per serving and you can make it in so many different ways...doesn't always have to be eaten fried!

                       

I found this recipe on www.ilovecatfish.ca and instantly printed it off to make that night for dinner. Catfish Tacos with a Citrus Slaw - delish! The recipe calls for grilled catfish, but since hurricaine Sandy hit, I wasn't about to brave it out in the pouring rain to turn on the BBQ. Instead I cooked it on the stovetop over med-high heat with a little bit of olive oil and it still ended up with that moistness-on-the-inside-but-crispy-on-the-outside that grilled catfish has. And the colourful citrus slaw has the perfect zing and crunch to go along with the warm and spicy catfish. I topped them with a little bit of pico de gallo, sliced avocado, and a side of tortilla chips. Ole! Taco night will never be the same.
